Homemade Banana Bread Recipe

I seriously love banana bread. Thus, I was ecstatic when I finally found great way to make it myself. This recipe is adapted from joyofbaking. I personally like my banana bread simple without nuts or anything. So if you like the variation, you can check her sites.

This recipe is really easy and you can pretty much mix everything in one big bowl. And most importantly, this banana bread is really yummy!

I waited until my banana turn brownish, as this is the sign the banana ripens. You want to wait until its ripens because then its flesh become very soft and sweet. It will be really delicious when mashed and baked in a bread.

  • 1 3/4 cups (230 grams) flour
  • 3/4 cup (150 grams) granulated white sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs, lightly beaten
  • 1/2 cup (113 grams) unsalted butter, melted and cooled
  • 3-4 ripe large bananas, mashed well (approximately 454 grams or about 1 1/2 cups)
  • 1 tsp vanilla extract

Instructions : 

  • Preheat oven to 180 degrees C. Butter or spray the botton and sides of a loaf pan. Set aside. 
  • Melt the butter in a microwave and set aside to let it cool completely. 

  • Mash the bananas. Mine is really soft and I am just using fork. 

  • In a large bowl combine the flour, sugar, baking powder, baking soda, salt. Set aside. 
  • In another bowl combine the mashed bananas, eggs, melted butter, and vanilla. (wet ingredients)
  • With a rubber spatula or whisk, lightly fold the wet ingredients into the dry ingredients just until combined and the batter is thick and chunky. 

  • Remember not to over mix the batter. You do not want it smooth. Over mixing the batter will yield though, rubbery bread. 

  • Scrape batter into prepared pan. 

  • Bake until bread is golden brown and a toothpick inserted in the centre comes out clean, about 55 - 60 minutes. 

While waiting for your bread to cool, you can wash the dishes ;)
