Despicable Me - Minion Cupcakes

Saturday, November 16, 2013

I love ‘em so much that I decided to make minion cupcakes this morning. I got this idea from Rosanna Pansino (you can check her tutorial video here).

Baking Minions is actually quite easy and simple! Any white cake or cupcake recipe will do, apart from that, all you need is a couple of twinkies that I got from a local candy shop, some writing mini icing and white-chocolate chips.
I know it can be hard to find twinkles in Australia, but I found mine from the candy shop in Market City. I also found some twinkles in a few convenient stores at Central station and in Harbour side.

My minion cupcakes turned out to be really good, surprisingly :p

I just felt so bad eating them lol

(adapted from Joy of Baking here)

1/2 cup (113 gr)  unsalted butter
2/3 cup granulated sugar
3 eggs
1 tsp vanilla extract
1 1/2 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup milk

1 1/2 cup icing sugar
1/2 cup (113 gr)  unsalted butter
1 tsp vanilla extract
2 tbsp milk
blue food colouring

Minion heads
Twinkies for the body
Chocolate sprinkles for the hair
White-chocolate chips for the eyes
Black writing icing

  1. Preheat the oven to 175 degrees C and line 12 muffin cups with paper liner.
  2. In the bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a separate bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.
  4. With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour.
  5. Fill the muffin cups with the batter and bake for about 17-20 minutes. Mine are done after 20mins. You will know the cupcakes are ready if an inserted toothpick comes out clean.

  1. In the bowl, cream the butter until smooth then add the vanilla extract.
  2. Gradually add the sugar.
  3. Add the milk and beat on high speed until frosting is light and fluffy (3-4mins)
  4. Adjust the milk or sugar if necessary.
  5. Tint the frosting with blue colour to make it look like the colour of Minion's pants.
  6. Level the cupcakes- make them flat by taking a big knife and cutting horizontally at the top so that the Minions will have the flat surface to sit on.
  7. Frost the cupcakes but make sure they have plenty time to cool before you do so.

Minion heads

  1. Cut the Twinkies in half.
  2. Take the black icing and squeeze two dots on top of their faces (which acts as glue).
  3. Stick the white chocolate chips as eyes on top of the dots.
  4. Draw the eyeballs, mouth and googles using black writing icing.
  5. Place a few chocolate sprinkles on the minion's head for hair.
  6. Finally, put the minions flat-side-down on top of each frosted cupcake.
